Pickled Shallots

Pickled Shallots Serves 4

Great to add a bit of acidity to a dish!

Ingredients:

1 shallot, sliced thin on the mandoline

4oz or 1/2c red wine vinegar

2oz water

5 black peppercorns

1 tsp sea salt

Method:

Bring the water and vinegar to a boil. Add in seasonings, remove from heat and add in the shallots. Let sit for 5 minutes. Chill in an ice bath to cool and stop the cooking process.
