Candied Nuts

Candied Nuts Serves 4

This is the perfect balance between sweet and savory. I apologize this is a chef’s recipe until I get back into the kitchen to measure properly.

Ingredients:

Nuts, of your choice. two handfuls.

Sugar, a handful

Ground Cardamom, a pinch

Ground Ginger, a pinch

Ground Chili Pepper, an even smaller pinch

Fine sea salt, a pinch and a half

Method:

Melt sugar over low-medium heat in a medium pan. Do not touch until it is fully melted and begins to turn amber. Put in the nuts and coat in the hot sugar using a rubber spatula. Remove from the flame and allow to cool. Put the pan back on the heat to remelt the sugar and crystalize. Add in your seasonings while hot so it sticks.

Cool on a silk-mat before eating.**


*make sure it is a spatula that can be used at high temperatures, otherwise use a wooden spoon.

**if you do not have a silk-mat you can put it onto a cookie sheet lined with parchment paper to cool.
