Balsamic Fior di Sale

How its Made:

Fior di Sale, also known as Salt Flower, is harvested twice a year in July due to specific environmental conditions that make it ideal for salt crystallization on the surface of salt tanks. The salt is collected using a wooden rake called a "pidocchio fiorito" once it begins to float on the surface. Balsamic Fior di Sale, on the other hand, involves adding balsamic to the fior di sale and then dehydrating it. This process results in the balsamic flavor and golden brown color on the salt but removes moisture to prevent it from clumping together.

Sweet, acidic, salty, and savory.

Uses:

The balsamic salt can be used as a garnish for Caprese salad, canapés, or cheese. Additionally, it can be used in cooking; it can be sprinkled on roasted vegetables, such as carrots or sweet potatoes. We recommend rubbing it on a steak in advance to allow it to permeate through the meat about an hour before grilling.
