The Fior di Sale (Salt Flower), also known as the caviar of salt but gets its name because of the patterns that the salt-crystals form look like flowers. This salt is only harvested in July of each year, the quantities are incredibly small because of this limitation. The salt crystallizes through the evaporation of the mother water inside of the salt tanks, unlike other salt this is formed floating on the surface of the water. The salt naturally dries and is unadulterated.
