Red Wine Vinaigrette

Red Wine Vinaigrette Serves 8

This vinaigrette is perfect as a marinade for protein, salad dressing, or sauce for roasted vegetables.

Ingredients:

For the Dressing:

115g (4fl oz) olive oil

42g (3 TB) red wine vinegar

12g (2 tsp) dijion mustard

2 garlic cloves, minced

1 small shallot, minced

3g (1/2 tsp) salt

2g (1/4 tsp) black pepper, freshly cracked

fresh herbs, chopped (oregano, rosemary, basil, parsley)

Method:

Finely mince shallot and garlic.

Chop herbs.

Whisk all ingredients together.


Store up to 7 days in the fridge. Vinaigrette will separate, just whisk or shake to emulsify.
