Fried Zucchini and Squash

Fried Zucchini and Squash Serves 4

This dish makes for a great appetizer or side dish.

Ingredients:

2 c flour

1 TB salt

1 tsp black pepper

1 medium zucchini

1 medium yellow squash

4 eggs

oil or lard to 1/2 fill pan or deep fryer

Method:

Cut the zucchini and yellow squash into 1/4” rounds. Mix the salt and pepper into the flour set aside. Whisk the eggs in a separate bowl.

Heat the oil or lard to 350F

With one dry hand and one wet hand coat the zucchini and yellow squash into the seasoned flour, then into the egg, and then back into the flour. Doing about 4-6 at a time and then put gently into the oil, swimming away from you. Once golden brown (2-3 minutes) flip over. Once golden brown on both sides, remove from oil and put it onto a wire rack or on a plate with paper towels to absorb any excess oil. Continue until done. Season with salt and pepper to finish.

Tip:

Make finger sandwiches out of the fried yellow squash and fried zucchini with a fresh slice of tomato in the middle and season with salt and pepper.
